Shrimp Rockefeller Stuffed Cremini Mushrooms
A Five-Star Appetizer
There are stuffed mushrooms, and then there are Shrimp Rockefeller Stuffed Cremini Mushrooms. This recipe was developed to deliver everything you want in an elegant hot appetizer: deeply savory cremini mushrooms, a rich spinach Rockefeller filling, a substantial bite of juicy shrimp, and a golden Parmesan-Gruyère crust. The finished recipe earned its five-star rating by concentrating the flavors and making every layer contribute something important to the bite.

Building a Better Rockefeller-Style Stuffed Mushroom
This recipe began with a good stuffed mushroom, but good wasn’t quite enough. The biggest challenge was getting closer to the experience of classic Oysters Rockefeller. A loose, creamy filling and crunchy breadcrumb topping made a tasty appetizer, but the individual components didn’t come together the way they should. The answer was to make the spinach Rockefeller filling more savory and cheese-forward and replace the breadcrumb topping with a true gratin-style cheese crust.
Why Cremini Mushrooms Make a Difference
Large cremini mushrooms provide a deeper, earthier flavor than standard white button mushrooms, making them an ideal base for a rich shrimp appetizer. Even the mushroom stems play an important role. Rather than discarding them, they are browned in butter with garlic and incorporated into the Rockefeller filling, adding another layer of concentrated mushroom umami. The mushroom caps are also given only a short initial roast, helping them release excess moisture without shrinking unnecessarily before they’re stuffed.

Keeping the Shrimp the Star
One of the most important lessons in developing this recipe was not to lose the identity of the shrimp. Instead of finely chopping it and blending it into the filling, the shrimp remains in substantial pieces. That means every mushroom delivers a recognizable bite of tender, juicy shrimp rather than simply tasting like a seafood-flavored filling. The shrimp is only briefly precooked before assembly so it can finish gently in the oven without becoming tough or dry.
A Richer, More Savory Rockefeller Filling
The heart of these shrimp stuffed cremini mushrooms is the spinach Rockefeller filling. Parmesan and Gruyère bring nuttiness and richness, while tarragon gives the filling the subtle herbal note that worked particularly well during testing. Worcestershire sauce and Dijon mustard deepen the savory character, lemon provides balance, and just a touch of nutmeg complements the spinach and cheese. Fresh tarragon is wonderful when available, but dried tarragon works beautifully as well, making this appetizer practical throughout the year.
The Parmesan-Gruyère Gratin Crust Changes Everything
The finishing touch is what truly separates this version from an ordinary stuffed mushroom. Instead of panko or loose breadcrumbs, the mushrooms are covered with a Parmesan-Gruyère cheese cap enriched with butter. As it bakes and briefly broils, that topping melts, bubbles, browns and develops into a cohesive gratin crust. The result is a topping that stays with the shrimp and filling when you take a bite instead of scattering crumbs across the plate.
Designed So Every Layer Comes Together
The order of assembly is intentional. The savory Rockefeller filling goes into the mushroom first, a substantial piece of shrimp sits prominently on top, and the cheese mixture stretches across the entire mushroom to form its golden cap. This construction gives you mushroom, spinach filling, shrimp and browned cheese together in the same bite—the balance that finally moved this recipe from very good to five-star.

That Final Golden Finish
A short trip under the broiler produces the deeply golden, bubbling surface that makes these stuffed mushrooms so inviting. Afterward, a brief rest allows the cheese crust to firm slightly, helping everything hold together while still remaining warm and luscious inside. It’s a small finishing step, but it makes a noticeable difference in both presentation and texture.
An Elegant Appetizer Worth the Effort
Shrimp Rockefeller Stuffed Cremini Mushrooms aren’t the quickest appetizer on the table, but they’re designed for occasions when you want something memorable. They make an impressive choice for holiday parties, dinner parties, cocktail gatherings, special occasions or an upscale seafood appetizer course. With earthy cremini mushrooms, savory spinach Rockefeller filling, juicy shrimp and a browned Parmesan-Gruyère gratin crust, this is the kind of appetizer that looks sophisticated and delivers an equally impressive bite.
Developed and Refined by Chef ETL
This was one of those recipes that required more than simply adjusting a seasoning or adding another ingredient. Chef ETL refined the proportions, cooking method and even the physical construction of the mushroom until the shrimp remained distinct, the Rockefeller filling became richer and more concentrated, and the cheese topping became part of the bite itself. That’s exactly what the 5StarRecipe.com philosophy is about: keep working on a recipe until that fifth star is earned.
Ingredients:
MUSHROOM & SHRIMP:
24 very large cremini mushrooms
1 pound shrimp, large (31/35 count), peeled, deveined
1 tablespoon olive oil, cut into bite-size chunks
1 tablespoon butter
1 small clove garlic, finely minced salt, to taste
1/2 teaspoon freshly ground black pepper
ROCKAFELLER FILLING:
3 ounces cream cheese, softened
3 tablespoons mayonnaise
1 1/2 cups frozen chopped spinach, thawed, very thoroughly squeezed dry
1/4 cup Parmesan cheese, finely grated
1/4 cup Gruyere cheese, finely grated
1 teaspoon fresh tarragon, finely minced (or 1/4 teaspoon dried)
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
2 tablespoons scallions, finely minced
1/8 teaspoon nutmeg, ground salt and freshly ground pepper to taste
CHEESE GRATIN CAP:
1/2 cup Parmesan cheese, finely grated
1/2 cup Gruyere cheese, finely grated
1 tablespoon butter, softened
Instructions:
Preheat oven to 425° F.
Preheat the grill to medium-high heat, approximately 450–500°F.
1. PREPARE THE MUSHROOMS (25 minutes):
Remove the stems from the mushrooms. Reserve enough stems to produce approximately 1/2 cup finely chopped mushroom stems.
Using a small spoon, carefully scoop out some of the interior of each mushroom cap to create a generous cavity for the filling.
Brush or toss the mushrooms very lightly with olive oil.
Arrange the mushroom caps stem-side down on a rimmed baking sheet. and roast 5-6 minute, just until they begin to release moisture.
Remove from the oven and turn them stem-side up. Drain any liquid from the pan and gently blot the mushroom cavities if necessary.
2. BUILD THE MUSHROOM-GARLIC FLAVOR BASE (10 minutes):
Melt 1 tablespoon butter in a skillet over medium to medium-high heat. Add the finely chopped mushroom stems and a small pinch of salt.
Cook for approximately 5–7 minutes, stirring occasionally, until the mushrooms have released their moisture and are beginning to brown.
Add the minced garlic and cook for approximately 30 seconds, just until fragrant. Remove from the heat and allow to cool slightly.
3. PREPARE THE SHRIMP (5 minutes):
Cut each shrimp into substantial pieces so that they will adequately fit into the cavity of each mushroom when assembling.
Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the shrimp, season lightly with salt and pepper, and cook for only 45–60 seconds, stirring or tossing once. The shrimp should still be undercooked at this stage because they will finish cooking in the oven.
Immediately transfer them to a plate.
4. MAKE THE ROCKAFELLER FILLING (5 minutes):
In a medium bowl, combine the softened cream cheese, mayonnaise until smooth.
Add the spinach, Parmesan, Gruyère, tarragon, Worcestershire, Dijon, lemon juice, scallions and nutme (allow the mixture to stand for 10–15 minutes before stuffing the mushrooms if using dried tarragon).
Fold in the cooled sautéed mushroom stems. Taste and season with salt and black pepper as needed.
5. MAKE THE CHEESE GRATIN CAP (5 minutes):
Combine the Gruyère, Parmesan and softened butter. Use your fingertips or a fork to work the butter evenly through the grated cheese. The mixture should hold together slightly when pressed.
6. ASSEMBLE (15 minutes):
Fill each mushroom cavity approximately two-thirds to three-quarters full with the Rockefeller filling. Do not mound the filling excessively above the mushroom rim.
Place one substantial piece of shrimp directly on top of the filling. Press it slightly into the filling so it is secure, while leaving most of the shrimp exposed above the surface.
Cover the shrimp with enough of the cheese mixture to create a thin cap extending from edge to edge of the mushroom. Gently press the cheese mixture into place so it contacts both the shrimp and the filling underneath.
