Ingredients:
3 tablespoons brown sugar (light or dark)
1/2 tablespoon cinnamon
2 medium Granny Smith apples, peel, core, and cut into chunks
2 medium Honeycrisp apples, peel, core, and cut into chunks
2 tablespoons unsalted butter
1 pinch salt
1/4 cup water
OPTIONAL:
Splash of lemon juice or a drizzle of maple syrup for brightness

Instructions:
Melt the butter in a medium saucepan over medium heat. Add the brown sugar and stir until the mixture is bubbly and caramel-like (about 1 minute).
Add the apples, cinnamon, water, and salt. Stir well to coat everything in the brown sugar-butter mixture.
Cover and simmer for 15–20 minutes, stirring occasionally, until the apples are soft and tender.
Mash or purée to your liking—smooth for a sauce, or leave it rustic and chunky.
