Inspired by an authentic Italian family recipe, these homemade meatballs deliver a rich, savory flavor, tender texture, and the comforting taste that defines classic Italian comfort food. 

From George Panetta’s Kitchen to Ours 

Every great family recipe has someone who kept it alive, and for our family, that person was George Panetta. George, my father-in-law, was a proud Italian whose passion for cooking began in his mother’s kitchen. To him, meatballs were never just another meal—they were part of family gatherings, Sunday dinners, and traditions that brought everyone to the table. His recipe reflected the simplicity of old-world Italian cooking: quality ingredients, careful preparation, and the belief that food made with love always tastes better. Although George passed away several years ago, every batch of these meatballs keeps his memory alive.

When I began developing recipes for 5StarRecipe.com, I faced a difficult decision. Should George’s recipe remain untouched, or could it become something even better? Rather than reinventing it, I chose to honor it. Batch after batch, I experimented with ingredient ratios, cooking techniques, browning methods, and simmer times. Every change was judged by one simple question: “Does this make the meatball better?” Some ideas improved the recipe, while others proved that George had already solved most of the puzzle decades ago. Ingredients:

SAUCE:
2 15-oz cans tomato sauce
1 32-oz jar marinara sauce
1 tablespoon Italian seasoning

BREAD:
2 ounces Italian bread, DAY OLD, crust removed (about 3-4 slices)
1/4 cup whole milk

SAUTE:
1 teaspoon olive oil
1 tablespoon unsalted butter
1/2 medium sweet onion, FINELY diced
4 cloves garlic, finely grated (microplane)

MIX:
3/4 cup Pecorino Romano cheese, freshly grated
1 large egg
1/3 cup fresh Italian parsley, chopped
1/4 cup fresh basil, chopped
1 teaspoon Kosher salt
1 teaspoon black pepper, freshly cracked
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper
1 teaspoon Worcestershire sauce
1/8 teaspoon nutmeg, freshly grated
1 pound ground beef (80/20)
1 pound ground pork

BROWNING:
2 tablespoons olive oil
1/4 cup dry red wine

NOTE: OVERNIGHT REST: The overnight rest (in the sauce) in the
refrigerator is another little secret. Many Italian cooks will tell you that
meatballs taste even better the next day, and I agree. Heat up the next
day on the stovetop.

NOTE: FREEZING: These meatballs should freeze exceptionally well.
Freeze them after they’ve simmered in the sauce.

Instructions:

SAUCE (15 minutes):
In a Dutch oven or large saucepan combine the tomato sauce, marinara sauce and Italian
seasoning. Bring to a boil. Let low-simmer UNTIL meatballs are browned.

BREAD (10 minutes):
Combine the milk and the bread (crust removed) and soak in the milk for 5-10 minutes.
Squeeze most (not all) of the milk from the bread. Mash the soaked bread into a paste.

SAUTE (while bread soaks + 5 minutes):
In a skillet heat 1 teaspoon extra-virgin olive oil and 1 tablespoon unsalted butter. Add the onion to the oil/butter and cook 5–7 minutes until translucent.

Add the minced or grated garlic. Cook 30–45 seconds, just until fragrant. Immediately remove from the heat and spread the mixture on a plate to cool.

MEATBALL MIXTURE (1 hour, 25 minutes):
Combine the bread paste with cooled sauted onion/garic, Pecorino Romano cheese, egg, parsley, basil, Worcestershire, spices. Mix until completely blended (creating a “flavor base”).

Add the beef and pork. Fold gently with your hands. Stop mixing the instant everything comes together (do not knead).

Refrigerate for 60 minutes (this firms the mixture and lets the flavors develop).

Roll into meatballs about 2 1/4 inches each (roughly 2 1/2 ounces each).

BROWN (25 minutes):
In a 12″ cast iron skillet (or other heavy skillet) heat 2 tablespoons olive oil over medium to medium-high heat until it shimmers but is not smoking. Add the meatballs, leaving about 1 inch between them.

Don’t overcrowd the pan. If necessary, cook in two batches. Brown them for approximately: 2–3 minutes on the first side (don’t move them), Turn 1/4 turn and cook another 2 minutes, Continue until you’ve browned 4–5 sides (Total skillet time: 8–10 minutes). The meatballs do not need to be fully cooked (looking for approximately:130–140°F.

SIMMER IN SAUCE (30 minutes):
Place the meatballs into simmering tomato sauce. Degalze the skillet with the wine, scraping up any browned bits and add to the sauce.

Simmer 30-45 minutes partially covered (this lets the meatballs absorb the sauce while staying juicy).

OPTIONAL: Overnight rest (see NOTES)
