Flor De Jerez
A Symphony of Sweetness and Spirit
The Flor De Jerez cocktail is a study in balance—sweet yet bright, refined yet full of life. Originating from the inventive mind of Joaquin Simo of Death & Company’s New Classics, this drink celebrates the softer side of rum while introducing the elegant complexity of sherry. It’s an invitation to savor something a little unexpected, where sweetness and spice perform a slow, elegant dance.
The Sweet Alchemy of Sherry and Apricot
The heart of this cocktail lies in the Lustau Amontillado “Los Arcos” Sherry—a Spanish gem known for its nutty, amber tones and long, silky finish. Its richness forms the canvas for the fruity brightness of Rothman & Winter Apricot Liqueur, which lifts the flavor profile with ripe orchard charm. Together, they bring sweetness that’s layered, nuanced, and utterly captivating.
Balancing Tart and Sweet with a Citrus Spark
Fresh lemon juice provides the sharp counterpoint that prevents this cocktail from veering into dessert territory. That citrusy tartness acts like a conductor, leading each ingredient to play in harmony rather than compete for attention. The result is a drink that dances between sweet and sour with precision—never cloying, always refreshing.

The Rum Backbone and Bitters Edge
Appleton Estate Reserve Rum, aged eight years, supplies the backbone—its spicy fruit and orange-peel notes wrapping the drink in warmth and sophistication. A single dash of Angostura bitters adds intrigue: a whisper of spice that deepens the sherry’s nutty character and amplifies the rum’s tropical essence. It’s a subtle addition, yet essential to the cocktail’s personality.
Crafting the Perfect Cane Sugar Syrup
Every great cocktail deserves a perfect sweetener. The cane syrup—made by dissolving organic cane sugar in water—delivers a gentle sweetness that ties everything together. It enhances the natural sugars in the sherry and liqueur without overwhelming the drink, ensuring every sip feels smooth, polished, and complete.
A New Classic in a Coupe
Shaken to a chilled, velvety finish and served in a coupe without garnish, the Flor De Jerez is both understated and unforgettable. Its amber hue and silky texture hint at the elegance within—a cocktail that feels timeless yet fresh, refined yet adventurous. It’s a modern classic that proves balance and beauty can coexist in every glass.
