The Party Dip That Deserves Center Stage
There is guacamole, and then there is guacamole that makes everyone stop, take another bite, and ask what makes it so good. Signature Fiesta Guacamole was created to deliver that kind of reaction. It keeps the fresh, chunky character people expect from homemade guacamole, but adds deeper, more layered flavor that makes it stand apart from the usual avocado dip.

Fresh Guacamole with More Depth
The foundation is still all about ripe avocado, fresh tomato, citrus, herbs, and aromatics. What makes this version different is the way those flavors are balanced so that no single ingredient takes over. The result is a fresh, chunky guacamole with richness, brightness, gentle smokiness, and a subtle savory quality that lingers after each bite.

Big Flavor Without Big Heat
Not everyone wants spicy guacamole, and this recipe was designed with that in mind. The flavor comes from careful seasoning and roasted depth rather than aggressive chile heat. That makes Signature Fiesta Guacamole a great choice for parties, family gatherings, game-day spreads, and casual entertainment where you want broad appeal.

A Restaurant-Style Guacamole Experience
One of the secrets to really good restaurant-style guacamole is texture. The avocado should never be completely smooth. Some of them should be creamy enough to hold everything together, while the rest stays chunky and substantial. That contrast gives each scoop a fresher, more satisfying bite and helps the guacamole feel made-to-order rather than processed.

Why Roasted Flavor Makes a Difference
A touch of roasted character gives this guacamole a deeper background flavor without making it taste smoky or heavy. It adds complexity in a way that is difficult to identify, which is exactly what helps elevate a familiar dish into something more memorable. That subtle depth works especially well with the freshness of avocado, tomato, lime, and cilantro.

The Importance of Balance
Great guacamole is less about using a long list of ingredients and more about getting the proportions right. Too much lime can overpower the avocado. Too much onion can dominate the bowl. Too much pepper can turn a crowd-friendly appetizer into something only heat lovers enjoy. This easy homemade guacamole recipe is built around balance, allowing the avocado to remain the star while every supporting flavor earns its place.

Perfect for Parties and Entertaining
Guacamole is one of the easiest appetizers to put in the center of a table and watch disappear. Serve Signature Fiesta Guacamole with crisp tortilla chips, alongside tacos, quesadillas, nachos, or grilled foods, or add it to a larger Mexican-inspired appetizer spread. Its mild heat level makes it especially useful when serving guests with different tastes.

Serve It Fresh
Homemade guacamole is at its best shortly after it is prepared. A brief rest allows the flavors to come together, but the vibrant color, fresh aroma, and chunky texture are part of what make this dip special. For the best results, prepare it close to serving time and keep air away from the surface if it needs to be held briefly.

A Guacamole Worth Remembering
The goal with Signature Fiesta Guacamole was not simply to make another good avocado dip. It was to create the kind of guacamole that tastes familiar at first, then reveals enough savory depth and complexity to make people keep coming back to the bowl. Fresh, chunky, mild, and deeply flavorful, it is designed to be the guacamole people remember after the party is over.

Ingredients:
tablespoons poblano pepper, roasted (see directions) and finely chopped
1 small clove garlic, roasted until soft
2 tablespoons onion, white, very finely minced
2 tablespoons fresh cilantro, finely chopped
1/2 teaspoon lime zest, finely grated
1/2 teaspoon Kosher salt (divided), plus more to taste
1/8 teaspoon MSG
1/8 teaspoon cumin
1/4 teaspoon sugar
3 large Avocados (Hass)
1 tablespoon fresh lime juice
1/8 teaspoon freshly ground black pepper
3/4 teaspoon jalapeno brine
1/3 cup Roma tomato, seeds and watery pulp removed, finely diced
tortilla chips to serve

Instructions:
TO ROAST THE POBLANO (20 minutes):
Place the whole poblano directly under the broiler, about 4 to 6 inches from the heat. Broil for approximately 3 to 5 minutes per side, turning as needed, until the skin is blistered and blackened over most of the pepper.

At the same time, wrap the garlic clove loosely in a small piece of foil and place it under the broiler alongside the poblano. Remove the garlic once it is soft and lightly golden, usually before the poblano is completely finished.

mmediately place the hot pepper in a small bowl and cover tightly with plastic wrap or a plate. Let it steam for 10 minutes.

Remove the pepper and gently peel away the loosened charred skin. Do not rinse the pepper under water, because that washes away some of the roasted flavor. Cut off the stem, open the pepper and remove all seeds and white membrane

Finely chop the roasted flesh. Measure 2 tablespoons for the guacamole. Refrigerate or freeze the remainder for another use.

MAKE THE GUACAMOLE (5 minutes):
Place the white onion, roasted garlic, cilantro, 1/2 teaspoon kosher salt, MSG, cumin, sugar, and lime zest in a medium bowl. Using the back of a sturdy spoon, mash and press the ingredients together for about 30 to 45 seconds. This helps release their oils and distributes the seasoning evenly throughout the guacamole.

ADD THE AVOCADOS (5 minutes):
Cut the avocados into irregular 1/2- to 3/4-inch chunks

Mash one-third of the cut avocados, working it into the seasoned mixture, until relatively smooth.

Add the remaining avocados, lime juice, 1/4 teaspoon salt, black pepper and pickled jalapeño brine. Fold gently.

Add the roasted poblano and diced Roma tomato and fold just until evenly distributed. Let the guacamole rest for 5 to 10 minutes.

Taste it with the tortilla chips you plan to serve. Adjust the salt first. If it still needs more brightness after the salt is correct, add another small squeeze of lime.

Serve immediately.

If you need to hold it, press plastic wrap directly onto the surface of the guacamole so no air is trapped underneath, then refrigerate. For best flavor and color, I’d try to serve it within 1–2 hours.
